06 - 4 thick slices country-style or sourdough bread

# Method:
01 - Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add chopped spinach and cook, stirring frequently, until wilted, approximately 2 minutes. Season lightly with salt and pepper. Remove from heat and allow to cool slightly.
02 - In a mixing bowl, combine the cooled sautéed spinach with crumbled feta and shredded mozzarella cheese. Mix thoroughly until evenly distributed.
03 - Lay out all bread slices. Evenly distribute the spinach-feta mixture over 2 slices, then top each with a remaining bread slice to form 2 sandwiches.
04 - Spread softened butter evenly over the outer surfaces of both sandwiches.
