01 - 1 medium head cauliflower, cut into florets (approximately 25 oz)
02 - 9 oz cremini or white mushrooms, sliced
03 - 1 small yellow onion, finely chopped
04 - 3 garlic cloves, minced
05 - 2 tablespoons fresh parsley, chopped
→ Seasonings & Oils
06 - 3 tablespoons olive oil
07 - 1 teaspoon dried thyme or 1 tablespoon fresh thyme
08 - 1/2 teaspoon crushed red pepper flakes (optional)
09 - Salt, to taste
10 - Black pepper, to taste
→ Optional Garnishes
11 - 2 tablespoons grated Parmesan cheese
12 - Lemon wedges
# Method:
01 - Pour 2 tablespoons of olive oil into a large skillet and warm over medium heat.
02 - Add finely chopped onion and sauté for 2 to 3 minutes until softened.
03 - Add minced garlic and stir constantly for 30 seconds until aromatic.
04 - Incorporate cauliflower florets and sauté for 5 minutes, allowing light browning.
05 - Add sliced mushrooms and remaining 1 tablespoon olive oil. Season with thyme, salt, black pepper, and red pepper flakes if using.
06 - Continue cooking, stirring occasionally, for 10 to 12 minutes until vegetables are tender and lightly caramelized.
07 - Toss in chopped parsley and adjust seasonings. Sprinkle with Parmesan cheese if desired and serve with lemon wedges.
